Grilled Jamaican Jerk Chicken

2 tbsp lemon juice2 tbsp lime juice1 tbsp dijon mustard1 jalapeno pepper, seeded and finely chopped1 garlic clove, minced2 tsp instant chicken bouillon1/2 tsp ground cumin1/4 tsp dried thyme leaves4 4 oz boneless skinless chicken breasts
In shallow dish or plastic bag, combine 3 tbsp water and all ingredients except chicken. Add chicken, coating well with marinade. Cover dish or seal bag and marinate for 4 hours or overnight. Prepare grill.
Remove chicken from marinade; pour marinade in small saucepan and bring to a boil. Grill chicken 15 to 20 minutes, turning occasionally and basting frequently with marinade.

GRALAN
With the citrus juices, cumin, and jalapeno pepper, this is a marinated Mexican-style chicken maybe. Aside from the Thyme this doesn't resemble Jamaican Jerk for nothing. If you like El Pollo Loco, then you've already eaten this basic recipe before. Perhaps use marjoram in place of thyme. - 2/21/21
