BBQ Baked Chicken Tenders Salad

1 and 1/3 to 2 lbs Chicken tendersSalt and pepper to taste1 cup Flour2 Eggs beaten with a splash of milk or water1 tsp Dijon mustard1 cup Plain bread crumbs1 cup Pecans finely chopped1/2 tsp NutmegCooking SprayZest of 1 orangeDressing1/4 cup Maple syrup1/4 cup Tangy BBQ sauceThe juice of 1 naval orange1/4 cup balsalmic vinegar2 Tbsp olive oil3 Hearts of romaine lettuce, shredded6 Radishes, thinly sliced6 Scallions trimmed and choppedSalt and pepper to taste
Beat eggs together with mustard. Process pecans, bread crumbs, orange zest and nutmeg in a food processor. Add salt and pepper to flour. Coat chicken with flour, then eggs, then crumbs. Put on parchment on baking sheet and bake at 500 for 15 minutes, flipping halfway thru.
Mix dressing ingredients, drizzling in oil last, as for vinegrette. Toss half dressing with salad ingredients and top each serving of salad with 2-3 tenders, drizzled with more dressing
