Easy Chicken and Dumplings

CarrotsOnionsCelery2 Bay LeafChicken BrothBoneless, skinless Chicken BreastsPillsbury (Reduced Fat) Grand Biscuits (8 pack)Corn Starch
Chop carrots, celery, onions and set aside. In a large pot add chicken broth under medium heat. Add carrots, celery, onions, and bay leaves to mix. Rinse chicken breasts and add to broth mixture. Let simmer for 30 minutes.
Open biscuits and dust counter top with flour. Roll out each biscuit one at a time with rolling pin, until flattened (to prevent gumminess) . Cut biscuit with butter knife into half inch pieces. Set aside.
Scoop out a cup of hot broth from chicken/vegetable mixture. Stir in corn starch. Mix back into chicken/vegetable mixture. Stir. Drop dumplings in one by one.
Cover bring to a quick boil. Then reduce heat and cook for 20 minutes.
