Crunchy Taco

Ingredients

3 ripe avocados 1/4 cup fresh lemon juice4 garlic cloves sliced1 lg. onion1/4 cup fresh parsley2 tsp. cumin powder1 cup sun dried tomatoe, soaked and chopped2 jalapeno peppers1 1/2 tsp saltromaine or leaf lettuce
Cut avocados into chunks, and pour lemon juiice over. set aside. Chop onions in food processor, then add rest of ingredients and process until smooth and creamy.
Spoon some of the mixture into a lettuce leaf and wrap it around.
**You can add more or less jalapeno pepper depending on taste.
This dish is spicy, but VERY GOOD!!!! taste just like a beef taco loaded with all the goodies.
