Barley Soup

Ingredients
1 Onion chopped1 TBS olive oil2 TBS Cilantro2 TBS Parsley2 Bay leaves 2 Cups Pearled Barley1 1/2 TBS Tomato Paste32oz. Chicken Broth (One Container)48ozs. Water1/2 tsp Curry1/2 tsp PaprikaSalt and Pepper to taste
Directions
Makes 16-18 one cup servings

Lightly sautee onion with Cilantro and Parsley. Add additional spices and tomato paste
Add Barley, Chicken broth and water
Salt and Pepper to taste if desired

Made in pressure cooker in 20 minutes. On stovetop let simmer 30-40 minutes or until Barley is cooked to your liking! I prefer a little bite to the Barley but you can prepare it to your own taste.
