Light Italian Meatball Soup

1 pound 93% lean ground turkey2 garlic cloves, minced1 large egg, slightly beaten1/2 cup panko bread crumbs1/4 cup Parmesan cheesesalt, pepperolive oil spray2/3 cup diced onion2 14.5 oz cans reduced sodium chicken broth2 14.5 oz cans diced tomatoes in juice1 20 oz bag frozen leaf spinach
Combine turkey, garlic, egg, panko crumbs, parmesan and salt and pepper in bowl. Using a TBSP, roll mixtures into ball for meatballs.
Saute onions in a stockpot using olive oil spray. Add broth, tomatoes with juice, and half of spinach and bring to boil.
Add meatballs and cook for 10 minutes. Add balance of spinach and cook until heated through. Check meatballs for doneness.
Serve garnished with extra parmesan if desired.
