Better Than Beef Stew (Vegetarian Vegan)

3/4 cup cubed onions4 peeled and sliced carrots1 cup sliced mushrooms (i left this out...icky!)2 potatoes cubed3 cloves garlic minced1 cup veggie broth1/4 cup (half can) tomato paste1/4 white wine OR 1/4 cup veg broth + 1 TBL vinegar1 TBL dried parsley1 lb tempeh, seitan, fake meat ect (I usually use Morningstar Farms Steak Strips)
1-Put all the ingredients EXCEPT the "meat" in a pot.
2-Bring to boil, then lower heat and simmer for 1 hour
3-Add meat substitute and cook for another half hour, or more until at consistency you desire.
