Cottage Turkey Delight

Ingredients
Yellow Squash, Zucchini, Cottage Cheese, Marinara sauce, Ground Turkey and Onion.
Directions
Dice onion and toss it into a frying pan with the ground turkey to brown/saute. While this is cooking up, slice the yellow squash and zucchini either lengthwise or into circles, however you prefer, but keeping things thin. I like to do one long and the other round, just to mix things up.

Drain a 2 cup pack of cottage cheese, rinsing to get rid of any extra juice. Things can get pretty wet in this dish if you miss this step, so be sure to let it drain for a few minutes. Mix the dry cheese in with a jar of your favorite marinara sauce; I'm using Light Ragu for this recipe.

Evenly layer the yellow squash on the bottom of a cake pan. Spread a thin layer of the red stuff onto the squash, then evenly cover it with the turkey/onion mix. Layer on the zucchini, then top it off with the rest of your red sauce.

Toss the whole thing in the oven at 350 for an hour, and let it rest for another 30 minutes on the stove top before serving.

This makes 8 servings, but if you eat this by itself and with no sides like I do, doubling up is very easy to do, and won't break the bank!

    It was okay. I felt that for all the delicious things that were put into the lasagna, it was lacking in flavor. The cottage cheese is a good shortcut, but I would recommend throwing a little ricotta in there just to add that extra something. - 3/19/09

    I made this tonight. It was wonderful! However it was very wet in spite of draining the cottage cheese, trying to figure out what to do to fix that next time. I also topped it with a little bit of mozzarella and added some garlic. - 3/18/09
