Pina Colada Muffins

Ingredients
WET Ingredients:1/2 cup sugar1 egg1/4 cup light butter, softened1 cup light sour cream1 tsp rum extract or vanillaDRY Ingredients:1 1/2 cups flour1 tsp baking powder1/2 tsp baking soda1/4 salt1 small can crushed pineapple, drained1/2 coconut, sweetened
Directions
MIX:
WET Ingredients -small bowl
DRY Ingredients -large bowl

ADD: WET mixture to DRY mixture in large bowl. Add pineapple and coconut. Mix unti blended.

Pour into lightly greased muffin tins and bake at 375* for 20 minutes or until done.

Yield: 1 1/2 dozen muffins

    Excellent recipe. Made it with GF flour and 1/2 cup of coconut. As someone else noted the recipe only made about 13 muffins, not the 18 the recipe states. I also used coconut oil instead of butter. - 2/9/14

    These were awesome!!! I used ww flour, ff sour cream, and natural applesauce (for butter). Made only 14 regular muffins. Refrigerate. Very moist and will mold. Next time I will make 12 larger muffins (136 cal./2 gr. fat) - 4/14/08

    Very good! I subbed plain yogurt for the sour cream, 1/4 cup applesauce for the butter, 2 tsp of real rum plus 1 tsp of vanilla for extra flavor. It only made 13 muffins, not 18, at around 150 cal/muffin. - 9/29/07
