Carrot Bran Muffins

Ingredients
1.5 cups wheat bran1 cup skim milk1 tablespoon lemon juice1/8 cup vegetable oil1 egg1 cup grated carrot1/3 cup brown sugar1/2 tsp vanilla1 cup whole wheat flour1 tsp. baking soda1 tsp. baking powder1/2 tsp. salt1/2 cup raisins
Directions
Mix together milk and lemon juice. Let stand for a couple minutes.

Preheat oven to 375 F.

Mix together wheat bran and milk; let stand. Combine vegetable oil, egg, brown sugar, carrot and vanilla and add to milk mixture.
Stir together flour, baking soda, baking powder and salt. Add to first mixture and stir until just blended.

Add raisins and spoon into prepared muffin tins.

Bake for 15-20 minutes. Makes 12.
