Mac's Cajun Dirty Bulgur

Ingredients
1 T canola oil 1 cup chopped onion1/2 cup chopped green bell pepper2 cups uncooked bulgur1 pound ground turkey 4 cups chicken broth1 tsp cajun seasoning1/2 tsp garlic powder1/2 cup chopped celery1/4 tsp red pepper1/4 tsp black pepper
Directions
Heat oil in medium saucepan. Saute onion and green pepper (and celery) until tender. Add bulgur and cook, stirring, until slightly toasty. Meanwhile, fry turkey in skillet (season to your liking), breaking into small pieces. Drain well. Add turkey to bulgur with chicken broth and all other ingredients. Bring to a boil. Lower temperature to slow cooking. Cook covered until broth is absorbed well in bulgur - 35-40 minutes. (It only took 20 minutes for me, so be sure to check it sooner.)

    Very yummy! It doesn't look too pretty, but the taste is fantastic. I used red bell peppers instead of green (what I had on hand) and that added nice color. I never would have thought to make bulgur this way, but am inspired to experiment now and try diferent one-pot dishes using it. Thanks! - 7/19/09

    A new household favorite! This was our first experience with bulgur. I cut the sodium by using low-sodium chicken broth and salt-free cajun seasoning. I also increased the veggie quantity, and used tabasco sauce instead of the red pepper. This made 4 huge servings, and was a very filling dinner. - 5/11/09
