Whole Grain Blueberry Oat Muffins

Ingredients
1 cup regular or thick cut rolled oats1 cup freeze dried blueberries1 cup 2% milk1/2 cup unsweetened applesauce1 egg2/3 cup agave nectar1 Tbsp lemon juice2 cups whole grain flour1-1/2 Tbsp baking powder3/4 tsp salt
Directions
Preheat the oven to 375 degrees. Spray muffin pan with non-stick spray. Soak blueberries and oats in milk. In a large bowl, mix together the remaining ingredients. Pour in the blueberries, oats, and milk and stir until just combined. Fill muffin cups 3/4 full. Bake 20-25 minutes or until done. Makes 13 servings.
