Caldo Verde ~ Portugese Kale and Potato Soup

Ingredients
2 Tbsp. Olive Oil1 cup carrots, chopped1 cup onion, chopped5 cloves of garlic, mashed or finely minced1 tsp Smoked Paprika or grind chipotle dry peper (optional)1 1/2 lb. potatoes, scrubbed, skin on, diced1 bay leaf1/2 tsp chili pepper flakes8-10 cups water or vegetable stock2 cups cooked white beans4 cups Kale, shredded1 tbsp. Braggs or Soy sauce1/2 cup cilantro1/4 cup parsleyseason with salt and pepper
Directions
Heat a large soup pot, add the olive oil, followed by the vegetables, carrots, onions, garlic and smoked paprika or chipotle pepper. Saute for 3-5 minutes stirring occasionally so nothing sticks or burns.

Add potatoes, bay leaf,hot pepper and stock. Bring to a boil, then turn down and simmer for about 30-45 minutes, until potatoes are done. Add remainder of the ingredients, kale, cilantro, parsley, Braggs or soy sauce and simmer another 15 minutes. Season with salt and pepper.
