Cooking spray1/4 cup chopped Onions1/4 cup diced Celery2 cloves minced Garlic2 cups Kitchen Basics Unsalted Chicken Cooking Stock 1 tbsp Curry powder1/2 tsp Black Pepper1 tsp *Splenda Brown Sugar Blend1 tsp ground Ginger 16 oz can of Chickpeas (garbanzo beans)16 oz can of unsalted Pumpkin
Spray a dutch oven or stock pot with cooking spray and saute the onions, celery and garlic until soft. Blend sauted vegetables chicken stock and garbanzo beans, curry, pepper, Splenda and ginger in the blender or use an emesion blender if you have one. Put back in pot and add pumpkin and heat through. If the consistancy is too thick add more stock or a bit of water to get a better consistancy for you.
