Gluten Free Turkey Bacon & cheese muffins

Ingredients
1 cup cornmeal1 cup brown rice flour 1/3 cup sugar2 tsp. baking powder1/2 tsp. salt1 egg, beaten1/4 olive oil1 cup skim milk 2 pieces turkey bacon, cooked and chopped1/2 cup monterey jack cheese, shredded2 TB ground FLax seed ( for fiber, optional)
Directions
Preheat oven to 400. Grease muffin tins.
In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Fold in bacon and cheese. Spoon batter into muffin tins.
Bake at 400 for 15 to 20 minutes, or until a toothpick inserted into muffin comes out clean.
