Vegetable and Chicken Bake

Ingredients
1 Zucchini1 Eggplant3 Shitake Mushrooms1 large tomato.5 Large red pepper2 chicken breast100 g shredded mozza (skim) cheese
Directions
Saute vegetables (diced) together until tender. Add spices as you see fit.
Fry chicken breasts (cubed)
Mix together and bake with cheese on top in low dish for about 20 minutes.
