Shrimp Tacos

Ingredients
Salsa:1/4 c. canned diced tomatoes1 clove garlic1 tbsp cilantro, thinly sliced1/2 tsp grated gingerTacos:6 oz. cooked shrimp, tails removed, chopped2 soft corn tortillas (6 in.)1 carrot, peeled and grated1/2 large romaine leaf, thinly sliced1/2 oz. goat cheese, crumbled
Directions
Makes 1 serving of 2 tacos.

For salsa:
Blend ingredients in a mini-chopper or blender; set aside

For tacos:
Divide shrimp between 2 tortillas. Top with carrot, lettuce, cheese, and salsa. Fold tortillas in half, wrap, and refrigerate until ready to serve. At lunchtime, unwrap and microwave 20 to 30 seconds.
