Tortellini with Basil-Tomato Sauce

4 (8 oz.) pkgs. cheese-filled whole wheat tortellini2 (28 oz) cans organic crushed tomatoes1/2 cup tomato paste1 tsp. Extra Virgin olive oil1/2 cup carrots, diced1/2 cup mushrooms, sliced2 T chiffonade basil1/4-1/2 tsp. crushed red pepper (optional)
1. Cook tortellini according to package directions. Drain; keep warm.
2. Meanwhile, for sauce, in a medium saucepan heat the olive oil over med-high heat. Add the carrots and cook for 5 minutes, stirring occasionally. Add the mushrooms and cook for 2 more minutes, until the mushrooms start to sweat. Next, add the crushed tomatoes and tomato paste and stir well to combine (if using crushed red pepper, add when adding the tomatoes). Bring to boiling; reduce heat. Simmer uncovered, for 2 to 3 minutes or until of desired consistency. Stir in basil; heat through. Spoon sauce over tortellini.
