Vegetable stir fry with eggs

2tbs olive oil1cup onion, chopped2 cloves garlic1 red pepper1 yellow pepper1 zucchini, cut lengthwise1tsp paprika4 large eggs1 cup reduced fat cheddar
Heat oil in a skillet that is oven proof. Heat broiler.
Add garlic and onions and cook until translucent. Add peppers, zucchini and paprika and tomatoes mixed with tomato paste and cook an additional five minutes.
Create wells in the vegetables for each egg. Add each egg separately into a well, salt and pepper to taste. Cook on oven burner until whites are just beginning to set.
Sprinkle cheese across the top of the egg/vegetable mixture.
Place under hot broiler and cook for approximately 5 minutes, until cheese is bubbling and eggs are fully set.
Serve immediately (serves 4).
