Tina's Tuna Salad

Ingredients
1 can of tuna in water1 tbsp regular mayo (or light if you want)1/2 can of peas1/2 cup of matchstick carrots (or however you prefer; grated, etc.)1/2 cup of celery, chopped1 hard boiled egg, dicedHandful of cilantro for flavorSalt and pepper to taste
Directions
Drain canned tuna and dump in a bowl, add a scoop of mayo and dashes of salt and pepper. Add peas, carrots, celery, hard-boiled egg, and cilantro. Omit egg to lower cholesterol. I also sometimes add freshly diced jalapeno for spice and extra vitamins. Stir well or until ingredients are combined. Serves 2 or 3 on a sandwich or with crackers.
