Fresh Apple Muffins

Ingredients
3/4 cup flour'1 t. baking soda1/8 t. salt1/4 t. nutmeg2 egg whites2 t. crisco vegetable oil1 cup chopped apple1/2 cup chopped walnuts1/2 cup shredded coconut
Directions
In large bowl combine flour, soda, salt, and nutmeg.
In separate bowl beat egg whites, sugar, and oil. Fold in apple, nuts, and coconut. Stir apple and egg mixture into dry ingredients just until moistened. Batter will be thick.
Fill pam sprayed muffin cups 3/4 full. Bake at 350 degrees 20-25 minutes.
Makes 16 2" muffins.
