Healthy Orange Chicken

Ingredients
* Chicken Breast, no skin, about 3/4 of a pound * 2 tbsp. peanut oil * Orange Juice, 0.5 cup * *Soy Sauce, 1 tbsp * Sesame Oil, 1 tbsp * Granulated Sugar, 1 tsp * *Pepper, white, .25 tsp * *Peppers, hot chili, red, fresh, 1 pepper (or 1 tsp. sambal oelek) * Cornstarch, 0.125 cup * Peanut Oil, 1 tbsp * 1 tbsp. ginger juice (or an inch of fresh minced ginger or 1 tbsp. jarred minced ginger)
Directions
This recipe works best using a regular frying pan, not a nonstick pan. Makes 2 servings of one small chicken breast.

Sear two small chicken breast in 1 tbsp. of peanut oil over medium-high heat. Getting a bit of a crust on the pan is a good thing. Set chicken aside and keep warm.

Add remaining ingredients except cornstarch to pan. Scrape the crust off the pan and mix all ingredients thoroughly. Simmer for about 5 minutes to meld flavors, then add cornstarch. Stir till cornstarch is thoroughly mixed in and sauce reaches desired consistency. Serve immediately over chicken.
