Potato Cheese Soup

-2 medium carrots-1 medium onion-1lb. red potatoes-1/2 c. fat free half-and-half-1 29 oz. container chicken or veg broth-2 c. 2% shredded cheddar cheese-1/2 tsp. thyme-1/2 tsp. dry mustard-1/2 tsp. paprika-salt-pepper-cooking spray
-Shred carrots
-dice onion
-clean and chop potatoes into little pieces
-in a big pot, spray with cooking spray and cook onions until they get soft and start to turn color over medium heat
-put the carrots in with all the spices for about 5 minutes
-put in potatoes, half-and-half, and chicken broth
-bring to a boil and then down to a simmer
-cook for 20-25 minutes, at least until the potatoes are tender
-remove from heat
-blend some or all of this up with a regular or immersion blender
-add the cheese
