Cobb Salad Wraps

Ingredients
1/2 lb. chicken breast, cooked and shredded1/2 c. chopped avocado4 turkey bacon strips, cooked and crumbled1 celery rib, thinly sliced'2 T. crumbled blue cheese2 T. lemon juice1 T. honey1 1/2 t. Dijon mustard1 garlic clove, minced1/4 t. dill weed1/4 t. salt1/8 t. pepper1 T. olive oil5 Romaine leaves, torn4 whole wheat flour tortillas (8") warmed1 medium tomato, chopped
Directions
In a small bowl, combine the chicken, avocado, bacon, celery, onion, olives and cheese. In another small bowl, combine the lemon juice, honey, mustard, garlic, dill weed, salt, and pepper. Whisk in the oil. Pour over the chicken mixture; toss to coat. Place romaine on each tortilla; top with 2/3 c. chicken mixture, then with tomatoes. Roll up each tortilla. Yield: 4 serviings

    The Sodium/Potassium ratio in this recipe is backward for good health. Leave out the salty ingredients-- blue cheese, turkey bacon, and salt, and cut the mustard down to 1/2 teaspoon. Find (or make) a wrap that had no or samll amount of sodium and this would be a truly healthful on the go meal. - 7/9/09

    These were delicious. I'd suggest editing either the ingredient list of the directions though. There are ingredients in the directions that do not appear on the list. - 7/11/09

    I chopped up fresh red onions, and omitted the cheese altogether, and threw in some cayenne pepper into the mix. I haven't tried it yet, but I have to say-it looks and smells AWESOME. Kudos! - 7/9/09

    I hate the heat in the kitchen except in winter. You could cook the chicken and bacon on different days when its cooler and save for the next day or 2 days after.Maybe spinach leaves to wrap in it. - 7/10/09

    My husband and I both loved it. I was out of honey so I omitted that and the blue cheese (I don't eat mold) and it was perfect for us! Dressing is amazingly good - even sans honey! - 8/7/09

    I made this for my husband & mother in law. Hubby ate it with the wrap, I made a salad of it! It was delicious! We left out the blue cheese, but added corn. I have added it to my menu for this week's dinners. - 7/20/09

    This came out great. I felt like I was being bad but knew I was being healthy. Instead of eating it as a wrap, I put it on 2 cups of spinach, 1 cup tomatoes, and 1/2 cup cucumbers. Loved the dressing in the recipe. - 7/14/09

    The directions call for olives but I don't see those listed in the ingredient list. What kind of olives and how much? The olive oil is added later in the directions so I don't think olives is a typo. - 7/10/09
