Sweet Potato Soup

1/2 c. chopped onion1/2 c. fresh broccoli, chopped1 roma tomato, seeded and chopped1 large banana, broken into 1" chunks1 t. grated lime rind (optional)1 medium red garnet yam, chopped, 1/2" chunks40 g dried apricots (about 7)1 c. fat free, low sodium chicken broth1/3 c. coconut milk1/2 t. curry powder (add more to taste, if desired)
Heat a medium saucepan briefly, then spray with non-stick cooking spray. Add onions and saute over medium heat. When softened, add remaining ingredients. Bring to a boil. Reduced heat and simmer until all vegetables are tender, about 20 to 30 minutes. Mash with a spoon or fork or blend with a stick blender, but leaving some larger pieces for texture.
