Vegan Apple Carrot Muffins

Ingredients
2 C. unsweetened soy milk (I used unfortified--fortified would add more vitamins to nutrition tracker)1/2 C. brown sugar1/4 C. applesauce, unsweetened1 Tbs. canola oil2 1/2 C. whole wheat pastry flour4 tsp. baking powder1 tsp. ground cinnamon1/4 tsp. salt1/2 C. grated carrot1 medium apple, chopped small
Directions
Prepare muffin tins with nonstick spray. Preheat oven to 350 degrees.

In a medium bowl, mix soymilk, brown sugar, applesauce, and canola oil.

In another bowl, mix dry ingredients. Add liquid to dry, scraping the bottom to get any brown sugar residue. Stir to combine. Add carrots and apples.

Pour into muffin cups.

Bake for 15 minutes or until muffins are golden.

    All my apples were rotten, so I added a small box of raisins with the carrots instead, I also used 1tsp of Pumpkin Spice because that's all I had, as well as almond milk instead of soy.
    Even with the substitutions they came out delicious! - 8/20/15
