Thai Curry Shrimp and Basil

Ingredients
1 tsp canola oil1 can light coconut milk2 cloves garlic, crushed2 tsp grated ginger root1/2 TB green curry paste or to taste16 oz raw, peeled and deveined shrimp15 leaves of basil, choppedjuice of one lime
Directions
1) Saute garlic and ginger in oil over medium/high heat until fragrant.
2) Add coconut milk and green curry paste, stir to combine.
3) Add shrimp and cook until no longer pink.
4) Stir in basil.
5) Squeeze in lime juice
6) Salt to taste.
*If you like foods spicy, add alittle more green curry paste to taste.
**Optional, garnish with chopped cashews.
Serve with brown rice.
