Zucchini Lasagna

Ingredients
6 medium Zucchini15 oz container Ricotta Cheese8 oz Mozzerella Cheese1/4 C Parmesan Cheese (or to taste)1 Tbs Dried Basi1 tsp Dried Oregano2 cups diced Ham (or substitute sausage)1 C sliced Mushrooms1 32 oz Jar Sugar Free Marinara Sauce of choice (I used Classico Tomato and Basil)Salt (to taste)Pepper (to taste)
Directions
Slice zucchini lengthwise. Mix ricotta cheese, parmesan cheese, and spices together in a bowl. Grate Mozzerella Cheese and set aside. Dice ham (or cook sausage) and slice mushrooms. In a 9 X 13 baking dish, layer sliced zucchini, spread cheese mixture then top with ham, mushrooms and marinara sauce and top off with mozzerella cheese. Repeat layers until baking dish is full. Cook at 375 for 30-40 minutes or until it bubbles and cheese is melted and browned. Test for doneness by pricking zucchini. Makes approx. 12 servings
