Balsamic Chicken Salad

Ingredients
- 16 ounces chicken, shredded- 1 (12-ounce) jar roasted red peppers, chopped- 1 cup chopped green onion- 1/2 cup pine nuts- 1/4 cup extra-virgin olive oil- 1/3 cup balsamic vinegar- 1 teaspoon salt- 1/2 teaspoon black pepper
Directions
In a large bowl, toss together chicken (shredded), red peppers (drained and chopped), green onions (only the green parts), and pine nuts.


In a separate bowl, whisk together oil, vinegar, salt, and pepper. Pour the vinaigrette over chicken and gently toss.


Each serving is 1/4 cup. Excellent served on bread, a low-fat wrap, or inside of a scooped out tomato half (as pictured).
