Mom's Potato Soup

1-3 TBSP butter or margarine1 onion, chopped2 C russet potatoes, boiled & slightly mashed3 C vegetable, chicken, or ANY stock, or water2-3 ribs celery, choppedSalt and pepper, to tasteMilk, to add if soup is too thick
Sauté onion in butter until soft. Peel potatoes and boil them in the broth until soft, then mash them a little, leaving some pieces of potato. Mix all ingredients together and heat on low until the soup is thick. Add milk if it's too thick.
The nutrition values given are based on vegetable broth. For a richer soup, use chicken broth. Chopped parsley is good to add in.

Very good! My family has a favorite recipe as well, but this is good, too. I forgot to mash the potatoes, which is part of our recipe, and it was good. I only got 4 -- 1 - cup servings. - 11/19/14

So glad you liked it! It's time for me to make it again. It's probably my grandmother's recipe, and who knows before then! I think I was figuring 1/2 cup was a serving.
