Spinach Salad with Mandarin Oranges and Walnuts

Ingredients
1 10 oz. pkg fresh spinach1 cups mandarin oranges, drained1/2 cup sweet onions, thinly sliced1/2 cup walnuts, roughly chopped1/4 cup olive oil1/4 cider vinegar2 TBS. granulated (or equivalent of sugar sweetner)1/4 tsp. salt1/4 tsp. black pepper
Directions
Mix first four ingredients in large bowl. Mix remaining ingredients in separate bowl until sugar and salt disolves. Pour over salad, and toss just before serving. Should serve 8.

    Great salad. I added tuna for protein along with toasted sunflower seeds, beet slices, blueberries, fennel, artichoke and freshly grated parmesan. Instead of making the dressing, I used balsamic vinegarette. - 3/13/12

    This salad is AWESOME! I made it for two different events I went to this past weekend and it was a hit both times. My only suggestion is to use real sugar and not a substitute in the dressing (it mixes and tastes better with sugar). Thanks for sharing!! - 9/6/10
