Mediterranean Chicken Frittata

1 T. EVOO3 cloves garlic1 cp. fresh asparagus1 tomato, seeded and diced8 kalamata olives1 cooked chicken breast, cubed1T each fresh dill & parsley6 eggs, beaten1/2 cp shredded mozzarella cheese1/4 cp fat free feta cheese1/2 cp plain greek yogurt
Saute veggies and chicken in olive oil over medium heat until the veggies are tender and the chicken is warmed through, about 5 min.
While the veggies cook, mix the eggs and the cheeses. Season with salt and pepper.
Add the fresh herbs to the veggies and toss to coat.
Then, pour the egg mixture over the veggies, making sure that the bottom of the pan is coated.
Allow eggs to set on the bottom and then place the pan in a 350 degree oven to finish cooking, about 10-15 min.
Cut into 6 wedges.Serve warm or at room temp with a dollop of greek yogurt.
