Creamy mushroom white wine chicken

1.25 lb boneless/skinless chicken breasts, diced1/2 medium onion, diced2 T olive oil5 cloves garlic, minced1-2 tsp sageblack pepper to taste1/2 c. white wine1 can condensed cream of mushroom soupwater (as needed)1 small can mushrooms
Heat the olive oil in a heavy skillet. Add the chicken and onion. Allow to cook untouched until brown on one side, then stir and continue to cook. When the scrapings on the bottom of the pan start to brown, add the garlic, sage, and pepper. Cook spices until fragrant (30-60 seconds), then deglaze the pan with the wine. Cook until chicken is no longer pink.
Stir in the soup and enough water to bring sauce to desired thickness. Stir in mushrooms and allow to simmer 5-10 minutes (long enough to cook a veggie or make a salad!).
Serve over broccoli, or if you're not watching carbs, over brown rice.
