Eggless Egg Salad (without Pita)

Calories for Egg Salad Alone1 serving firm tofu1/2 tablespoon vegan mayonnaise1 teaspoon mustard1/2 tablespoon organic relish1 tablespoon chopped onion2 tablespoons chopped celerySalt and pepper to taste1 whole wheat pita pocket (130 calorie)10 sprigs of baby spinach3 mushrooms sliced3 grape tomatoes cut in half
Press tofu to get out as much liquid as possible. Crumble tofu with a fork until it is the size of chopped eggs. Stir in remaining ingredients and chill for one hour before eating.
When ready to serve, warm pita pocket in heated pan for about 30-60 seconds then cut in half and fill each 1/2 with some greens and eggless salad. Sprinkle with paprika before serving for extra color and flavor.
