2 cups plain flour (i used 1 cup of unbleached wheat flour w/one cup white plain flour)1 teas baking sodapinch salt1 cup Splenda1/2 cup egg beaters1/2 cup canola oil2 bananas mashed1/2 cup walnuts
Preheat oven to 350 degrees. Spray loaf pan with cooking spray. Mix and sift dry ingredients. Mix oil and egg beaters together and add to dry ingredients. Mix together. Add bananas and walnuts to mixture and at this point I had to get out mixer. Beat until well blended. Pour into loaf pan and bake at 350 degrees for 55 minutes to one hour or until firm and golden brown.
