Green Curry Chicken Stir Fry

1 medium carrot1 1/3 cup zucchini, chopped (about 1 med.)1 2/3 cup Dikon, chopped (about half)1 small onion1 1/3 cups green pepper, chopped ( 1 med.)1 jalapeno pepper4 medium stalks celery, chopped227 grams mushrooms, fresh, sliced (8 oz.)18 oz. boneless, skinless chicken breast1 TBS. green curry paste2 TBS. Premium fish sauce1 TBS. extra virgin olive oil1 TBS. brown sugar
Makes four servings.
Cook \chicken and set aside.
Cook vegetables for about 10-15 minutes, just until they start to cook.
Add chicken and sauce. Toss well and cook 5-10 more minutes.
Serve alone, with brown rice, or rice noodles.
