Sweet N Spicy Yellow Pepper Soup

4 yellow bell peppers, cut into quarters2 Med. Sweet Potatoes, cut into quarters1 Med. onion, chopped1 stalk of celery, diced1 carrot, diced4 cups of vegetaable broth12 croutons, GF1 Tablespoon of Olive Oil2 Chili peppers
Roast Peppers in oven for 30 minutes at 425 degrees, turning after 15 minutes. When skin is charred all around, remove from heat and allow to cool. Cut in half, remove seeds and skin.
Heat Olive oil in a med. saucepan.
Add the chopped the carrot, onion, and celery and chili peppers. Saute until the vegetables turn golden brown.
Place Peppers in the pot. Add Potatoes. Add Broth(if necessary add water to cover). Cook 45 minutes. Puree in a blender or food processor. If it seems too thick add water or milk
makes 6 servings @ 1 cup each.
