Pork Fajita Filling

Ingredients
0.5 lbs pork loin chops (sliced)2 tbsp canola oil1 onion, medium1 green pepper, medium1 cup fresh mushroom (sliced)salt and pepper, add to taste1 tsp curry powder2 tsp chili powderadd other various herbs/seasonings as desired1/4 cup water1 tomato (diced)1/2 cup light cheddar cheese (grated)6 tbsp sour cream, fat free6 tbsp salsa
Directions
Add oil to frying pan. Brown pork. Add onion, pepper, and mushrooms. Add all spices/herbs/seasonings. Add water. Reduce to med-low heat, cover and simmer for a few minutes.

Fill 6 tortillas with pork mixture. Add other toppings. Wrap and enjoy!

Makes 6 pork fajitas.
