Chicken Fettucini Alfredo

Ingredients
8 tbsp Butter16 tsp flour5 C half and half1 tsp salt1/2 tsp black pepper1/4 tsp nutmeg2 tbsp crushed garlic1 lb chicken tenders1 tbsp olive oil2 lbs pasta
Directions
Cut chicken into bite sized pieces and brown in olive oil until lightly browned. Set aside chicken. In a medium sized sauce pan over medium low heat melt butter. Add the flour and whisk for approx 3 minutes. Whisk in half and half, increase heat to medium high. Whisk the sauce until it comes to a simmer and it is thick and smooth ( should take around 3 minutes.) Whisk in salt, pepper, nutmeg and garlic. Taste and adjust seasonings if needed. Add chicken and cooked pasta to sauce and serve. Makes 12 8 oz sevings.
