Ingredients
5 cups fresh mushrooms2 cups Zucchini2 14.5 oz cans diced tomatoes2 cups diced sweet onions2 blocks of firm or extra firm tofu4 cups 99% fat free beef broth4 cups water5 beef bouillon cubes2 tsp crushed chilis (or to desired taste)1 whole bay leaf
Directions
Makes 18 1-cup servings.

combine all ingredients, bring to a boil.
Reduce heat and simmer on low heat for 1 hour.
