1 c chopped onion, 2 c diced celery, 2 c chopped carrots, minced garlic, black pepper,bay leaf, louisiana hot sauce to taste, 20 oz split peas, 12 oz kielbasa, 2 cans chicken broth, 2-4 cups water
dice kielbasa and saute in soup kettle, add onions, celery, and carrots. add garlic, black pepper, hot sauce and bay leaf to your taste, split peas, chicken broth and water. (the amount of water depends on the thickness of the mixture and size of the pan. Bring to boil then reduce to simmer. After about 1 hour, add diced potato and continue to simmer, soup is done when potato is cooked through, it will continue to thicken the longer it cooks and more water may be added.
