Easy Banana Muffins

Ingredients
3 medium, extra ripe bananas, mashed1/4 cup of butter or margarine, softened1 cup granulated sugar2 cups white flour1 tsp salt1 tsp baking soda
Directions
Preheat oven to 360

Mash bananas with a fork until relatively soft and smooth
Add butter and sugar, cream together
In separate container, mix flour, salt, and baking soda
Add mixture to butter and bananas, stir until blended
Batter will be very dense (and delicious!)
Spoon batter into lined or greased muffin tin, filling each compartment 2/3rds of the way
Bake for 25 minutes, or until fork pulls out clean

    I've always made a too-moist banana muffin before this recipe - it's just delish! Good banana flavor and spraying each paper liner enabled the baked low-fat muffin to easily pull away from the liner. I did add about a half-cup of chopped nuts - still a lo-cal, delicious muffin. That's rare! - 9/8/11

    I think I went a bit wrong in converting cups to uk measurements, but that was my fault, and other than that, the muffins were really easy to make and taste lovely :) - 6/6/09
