banana quinoa breakfast pudding

Ingredients
1/3 cup quinoa2/3 cup water1/8 tsp salt 1 medium banana1 medium egg1/3 cup 1% milk1/3 cup nonfat dry (powdered) milk1/8 tsp Vanilla Extract
Directions
rinse quinoa, add 2/3 c water, quinoa, and 1/8 tsp salt to pan. Bring to boil, reduce heat, cover, and cook 10-15 minutes until water is absorbed. Meanwhile, blend together egg, milk, dry milk, and banana. Add to quinoa, and simmer, stirring, for about 5 minutes or until thick and uniform. Turn off heat and stir in vanilla.

    I would rate this recipe-very good. I made it on the 2nd day on this website and I had it warm that morning. The next morning I ate it cold with a sprinkle of nutmeg and I really preferred it that way. This recipe really kept me satisfied for along time and I like that it is high in protein. - 2/9/12
