Two large boneless, skinless chicken breasts.1 can pineapple chunks, in juice (not syrup) with 1/2 cup pineapple juice.2 cups cubed green or red peppers.1/4 cup sliced scallions1/5 cup sliced carrots1 cup green beans or snap peas4 slices cooked bacon; crumbled for top garnish.1 cup Lawry's Hawaiian Marinade
Spray a large rectangular baking pan or cookie sheet with Pam. Cube two large skinless, boneless chicken breasts. In a large tupperware, add chicken, cubed green peppers, sliced scallions & carrots. Add green beans. Add 1 can pineapple chunks with 1/2 cup pineapple juice from the can. Add 1 cup Lawry's marinade and toss to coat. Let sit 30 minutes (or overnight).
Skewer and grill for kabobs OR Broil indoors on low for 20 minutes, turning midway. Watch carefully - Lower rack if darkening. Serve hot over rice with crumbled, cooked bacon on top.
