Ingredients
1 bag cooked frozen shrimp, thawed (30-40 large)2 tbsp natural peanut butter2 tsp light soy sauce1 tbsp sesame oil3 scallions1/2 green bell pepper1 tsp cumin1 tsp chili powder (or more to taste)1 tbsp basil
Directions
Saute shrimp, scallions, and pepper in sesame oil for 2-3 minutes.
Add remaining ingredients, cook 3-4 more minutes until shrimp are warmed through.

Serve over rice (not included in calorie count)

    This is awesome! It's light and filling and is a really balanced recipe. It's pretty easy to make and only took me about 15 mins including prep. time. I use a supplemented all natural peanut butter that has a sweet taste and it antagonizes the spiciness well. I'd eat this once a week, easily! - 4/4/09
