Easy Honey Wheat Bread (no bread machine)

3 cups warm water (110 degrees F.)2 - .25 oz packets of Active Dry Yeast2/3 cup of honey5 cups whole wheat flour3 cups bread flour4 tbsp melted butter1 tsp salt1/4 cup Bob's Red Mill Ten Grain cereal1/4 cup unsalted, hulled sunflower seeds
1. Combine warm water, honey, yeast, 3 cups bread flour and 2 cups whole wheat flour and stir 'til combined. Let rise until mixture has become large and bubbly. 2. Add 3 tbsp butter, salt & 2 more cups of whole wheat flour. Knead on floured surfaced until dough becomes smooth and elastic, only slightly sticky. (This should take the remainder of your flour.) Add seeds & grains and knead enough to get them mixed in well. 3. Place dough in LARGE greased bowl, flipping once to coat the dough. Let rise, covered with a damp towel in a warm place until nearly doubled in size. (In the oven with the light on or oven set to Warm is good.) Remove, punch down and divide into 3 loaves and place in oiled loaf pans. Bake @ 350 degrees F. for 25-30 mins. Loaves should sound hollow when you tap on them. Brush crust lightly with melted butter and allow loaves to cool completely on wire rack. Loaves freeze well.
