3/4 cup all-purpose flour3/4 cup whole wheat flour1 cup rolled oats1/4 cup white sugar1/4 cup packed brown sugar2 teaspoons baking powder1 teaspoon baking soda1/2 teaspoon salt1 egg3/4 cup skim milk1/3 cup unsweetened applesauce1/2 teaspoon vanilla extract1 cup mashed bananas
1. Preheat over to 400 degrees.
1. Combine flours, oats, sugars, baking powder, soda, and salt.
2. In a large bowl, beat the egg lightly. Stir in the milk, applesauce, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Spray 12 muffin cups with cooking spray, and divide the batter among them.
3. Bake at 400 degrees for 18 to 20 minutes.
