Sausage Pesto Fritatta

8 large fresh eggs, four separated with yolks discarded1 cup 1% or skim milk4 tbsp pesto, from the deli or homemade3 oz romano cheese, shredded2 chicken italian sausages, cooked and sliced into 1/4 inch slices1 medium onion, diced4 garlic cloves, smashed and minced2 cups of fresh steamed or frozen spinach washed and drained
Preheat oven to 350.
Beat together eggs with milk until fluffy, fold in pesto. Mix in cheese, sausage, onion, garlic and spinach with a spatula. Pour into 9x9 square pan that has been greased with non-stick cooking spray and bake for 40-45 minutes or until fluffy and firm. Serves 4.
