Dijon Mustard Vinagrette

Ingredients
1 tbsp Dijon Mustard1 tbsp Cider Vinegar1 tsp Garlic1 dash Salt1 tbsp Extra Virgin Olive Oil) (1/2 for light)
Directions
I make this in a small cup or very small bowl as this recipe is only for two servings. Simply multiply it to accommodate your own needs! ALSO - using half the EVOO will decrease the to 45 and the fat to 3.5g!



-Whisk the dijon mustard, cider vinegar, garlic salt to make an emulsion.
-Slowly stream in the EVOO while whisking and make sure ingredients are all blended together well.
-Taste and add more of any of the ingredients as some people like this more or less "vinagrette-y".
-Serve lightly over greens.

    Made a spinach salad & made this to dress it. I made it by measure, but instead of 1/2 EVOO/water, I did 2/3 to 1/3. Used Stone Ground Mustard rather than Dijon. For our taste the mustard & EVOO flavors were too strong. Tomorrow I'll try to doctor it to taste, which is how I would make it again. - 4/15/21

    Excellent! I used, however, a sweet-hot mustard. Really tasty and went a long way. Only used about 1 tablespoon on a huge salad. - 2/29/12
