Healthier Blueberry Lemon Muffins

Ingredients
1/2 cup Whole wheat flour1/2 cup Kamut flour1/2 cup Flax Seed Meal1/2 cup dark brown sugar1 tbsp Baking Powder1/4 tsp Salt2 large egg whites (4oz)1/2 cup unsweetened applesaucezest of 1 lemon1/2 cup of fresh lemon juice6 oz Fresh Blueberries
Directions
Preheat oven to 400

Mix all dry ingredients
In a separate bowl, mix all wet ingredients
Mix the dry into the wet until completely blended
Carefully fold blueberries into the mixture

Spray muffin tin with cooking spray or use muffin cups
Pour mix into tin
Optional: sprinkle brown sugar on top of each muffin(not included in nutritional info)

Bake for 25-30 minutes

    Very good and oh so healthy. I have been eating one for breakfast and it fills me up! Next time I make them I am going to try less lemon juice and more applesauce. Thanks for the recipe. This is a keeper - 4/11/09
